The tree has been trimmed. The lights have been strung. The cookies have been baked…and many of them eaten. Christmas is my favorite thing about winter. The warm glowing lights. The crackling wood in the fireplace. The cozy clutter of decorations. The family time. The advent…the waiting…the anticipation. (Increased this year by the gift of discovering our baby’s gender on Christmas Day.) The dressing up in red, knit and boots. Celebrating the birth of Jesus and all that it meant when God came to walk the earth in human form. (Increased this year by the kicking baby in my belly reminding me often of Mary, young and scared, carrying the most important baby in the world.) The excitement of a small child over every element of the holiday season.
I had plans to walk you step by step through my favorite cookie recipe—Peanut Butter Blossoms—and a new recipe from my neighbor that I tried for the first time—Peanut Brittle—but a) I don’t have time, b) I’m too lazy to dig the recipes back out of the recipe box, and c) you are done making Christmas cookies and treats by now, anyway, right?
I’m eating both right now and they are delicious! That’s all you really need to know, really.
Speaking of our recipe box, a friend gave us this one as a wedding gift. Susan, I think of you every time I’m digging for a recipe!
Some people call them No Bakes. I always called them Chocolate Oatmeal Cookies. Whatever you call them, they’re quick and easy and tasty and I’m not sure why in my adult life I have never made them. Jason had a few made by my mom a few months ago and has since requested that I make them.
Last night I finally went hunting for the recipe card over at mom’s. Here they’re called No Bake Oatmeal Cookies. I love old handwritten recipe cards, don’t you? I love how it’s all dirty and worn and has penciled-in notes for halfing the recipe.
I pulled together all the ingredients. Thankfully, I had everything on hand except oatmeal. Dang, what’s a lot of sugar. These are basically candy … Also, I had to ask a friend what oleo is. (Butter) I use salted butter so I skip the pinch of salt in the recipe.
I made these as a surprise for Jason so hopefully he’s not reading this. (Are you, babe?) They came out pretty freaking good. I hope he likes! 🙂
Here’s the recipe/directions if you want to make some of your own:
Pour 2 cups sugar, 2 tbsp cocoa, 1/2 cup milk and 1 stick of butter into a saucepan. Heat to a boil and cook for 2 minutes. Remove from heat and stir in 4 tbsp peanut butter, 1 tsp vanilla and 3-3.5 cups of oatmeal. Drop spoonfuls onto a wax paper or foil and allow to cool. Enjoy!
